Contrary to popular belief, our eyesight can be improved. Most doctors would have you believe otherwise, similar to the idea that I.Q. can't be raised or certain illnesses like diabetes can't be cured. These are commonly accepted ideas, but false. We don't have to agree anymore. Our health and healing is up to us! We can decide what makes sense for us. We can become informed about natural ways to live a healthy life.

Surprising Data About Eye Health & Vision

Other than our brains, our eyes need more oxygen and blood circulation than any other part of our bodies.

Findings of a study on the affects of impotency drugs on men with a history of heart attack or high blood pressure showed they have 10 times more risk of optic nerve damage by taking those drugs. The drugs potentially reduce blood flow to the anterior optic nerve.

Too much sugar in our diets will raise the risk of becoming diabetic, and developing cataracts and glaucoma.

Our eyesight is not static. When 20,000 school children had their eyes examined for a special medical study, the result was that more than half had normal eyes, with sight that was perfect at times. In our high-tech age, we often stare at computer screens or TVs hour after hour. One visionary doctor suggests we make up for the eyestrain this causes by looking out at a distance for eight minutes, and doing this two to three times a day. Especially doing this before we sit down to our computers is important. When we look at things far away, we should notice details.

Notice the shapes of clouds. Notice the outlines of buildings. Look for bird nests in trees. Really look out at things away from you. This doctor says by doing this, our lenses can begin to regain their flexibility. Our eye muscles would contract and then expand, allowing them to relax.

When I was a child, my father used to tell me (when I would refuse to eat my carrots and leafy veggies) "Have you ever seen a blind rabbit?".

For eye health specifically, we want to incorporate in our daily diet leafy greens that are rich in phytonutrients such as Lutein, Zeaxanthin, Carotenoids etc.

These are found in deeply-colored vegetables such as spinach, broccoli, collard greens, chard, romaine lettuce, butternut squash, carrots, tomatoes and so on. We should also be in eating some of the yummy fruits that help promote good vision and reduce eye fatigue such as blueberries, apricots, bilberries.

Healthy Raw Borscht Soup Recipe

The following non-heated soup recipe features fresh foods like carrots and walnuts that provide vital nutrients for the eyes. The recipe comes from the book Raw Family. Order the book Raw Family.

Blend these ingredients well in a blender or Vita-Mix:

  • 2 cups of water
  • 3 beets, chopped
  • 1 small piece ginger root, sliced
  • 3-4 large cloves garlic
  • 6-7 bay leaves

Pour the mixture into a big bowl.

Blend the following ingredients for about 30 seconds:

  • 2 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of
  • 1/2 cup of olive oil
  • Sea salt to taste

Add 1/2 cup walnuts and blend on low speed very quickly, so they just break into small pieces but are not blended. Pour mixture into same large bowl and stir.

Dice or grate:

  • 1/4 head of cabbage
  • 1-2 carrots
  • 1 bunch of parsley

Add grated ingredients to the blended mixture. Stir and serve.

Makes 7 - 10 servings.
