Overview
This Unfiltered San Giuliano Extra Virgin Olive Oil comes from the freshest green fruit of the olives picked at the early stages of the harvest period. This oil is purposely not filtered preserving the original characteristics of the olives.
It is absolutely raw and contains all the nutrients found in the olive fruit including anti-oxidants (polyphenol).
Freshness, cloudiness and light nuances of spice with a fruity note best describe the overall attributes of this oil. Natural dense and cloudy. Intense golden yellow color with light green hues. Its aroma is characterized by vegetables hints of artichoke, tomatoes and balsamic herbs which bring in mind the fruit just harvested. Smooth, rich feel, with some bitter and pungent taste present at end (showing true healthy olive oil characteristics of content. Not chemically treated to remove any healthful properties or flavor. )
The oil is made by the Manca family in Sardinia, Italy, which has been making multiple types of olive oil since 1916. Owner Dan Giuliano harvests the freshest Bosana, Frantoio, Leccino, Semidana and Coratina olives, then cold-presses them in a continuous cycle system that uses only pressure from granite millstones and preserves the integrity of the oil in a controlled environment. Immediate storage without filtration until ordered for bottling and delivery.

Suggested Use
With its robust and dense body, this oil is recommended for uncooked condiments as marinades, salads, bruschetta, garlic and focaccia bread, raw vegetable dip, vegetables, fish and meat and all of those dishes in which you want to add a distinctive and characteristic note.
This oil should be carefully stored not exposed to heat or light, and best if used within the first few months. Since it is completely unfiltered olive oil, it has a naturally cloudy appearance and may contain a sediment at the bottom of the bottle. That deposit is a natural byproduct of the production process and it settles while the oil is decanting over time. Shake the bottle before use if you wish to include sediment when you pour for use.
