Healthy Raw Borscht Soup Recipe

The following non-heated soup recipe features fresh foods like carrots and walnuts that provide vital nutrients for the eyes. The recipe comes from the book Raw Family.

Blend these ingredients well in a blender or Vita-Mix:

  • 2 cups of water
  • 3 beets, chopped
  • 1 small piece ginger root, sliced
  • 3-4 large cloves garlic
  • 6-7 bay leaves

Pour the mixture into a big bowl.

Blend the following ingredients for about 30 seconds:

  • 2 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • 1/2 cup of olive oil
  • Sea salt to taste

Add 1/2 cup walnuts and blend on low speed very quickly, so they just break into small pieces but are not blended. Pour mixture into same large bowl and stir.

Dice or grate:

  • 1/4 head of cabbage
  • 1-2 carrots
  • 1 bunch of parsley

Add grated ingredients to the blended mixture. Stir and serve.

Makes 7 - 10 servings.
