Freeze-drying is recognized as the best drying process to preserve the nutrients in foods by using a low-temperature, low oxygen-exposure process. The Acerola fruit is concentrated in its freeze-dried form, and Vitamin C well-preserved. Vitamin C is a heat-sensitive nutrient. (By choosng freeze-drying instead of a spray-dried powder, we could preserve the nutrients and avoid the large amounts of additional ingredients which are often added during spray-drying, such as maltodextrin or whey protein isolate.)
