Freeze-drying is recognized as the best drying process to preserve the nutrients in foods by using a low-temperature, low oxygen-exposure process. THe Acerola fruit is concentrated in its freeze-dried form.
There is a very small amount of silicon dioxide (2%) in the powder to reduce clumping. We consider this the lesser of two evils: most spray-dried powder is subjected to high heat during the spraying process which destroys nutrients. Vitamin C is a heat-sensitive nutrient. Also, in spray-drying, maltodextrin or whey protein isolate are often used as a matrix for the fruit powder to to reduce moisture and allow for precision particle sizing and dissolvabilty. Many fruit and vegetable powder are processed this way. By choosng freeze-drying instead, we could preserve nutrients and the larger amounts of additional ingredients which are often not on the labels.

Once opened, this powder may absorb water if exposed to humidity, so close tightly. If clumping does occur, lay the bag on a flat surface and place a towel over the bag. Then pound on the bag until the clumps break up. The towel will help protect the bag from damage. To further reduce clumping push as much air out as possible before sealing the pouch and store in the refrigerator or freezer.
